We set out toward wide horizons, breathtaking landscapes, and the sound of the roaring North Sea. Our destination: Henne Kirkeby Kro – to meet the young, passionate team, experience the West Jutland charm and heritage, and gain insight into their approach to gastronomy.
It was a day full of discovery, where we got to know the open, grounded people, observed the informal and efficient atmosphere in the kitchen, and explored the lush, vibrant kitchen garden. Here, it became clear that fine dining and a high, professional gastronomic level can be down to earth. At Henne Kirkeby Kro, you step into a cozy time capsule – one that honors the legacy of the old roadside inn, while welcoming the spirit of today.
Get a glimpse into our day, and hear from head chef Alan Bates, as he shares his thoughts on working with ingredients and crafting menus. We also spoke with assistant restaurant manager André Larsen about the inn’s history and their connection with guests. What kind of culinary experience can guests expect when visiting you?
You can have an incredible experience with us – we have the garden, world-class facilities, and an amazing team of people. We’ve got a great passion for food and an incredible, incredible wine list. You know, the best of the best. That’s what you can expect when you come to Henne Kirkeby Kro.
How do you go about creating your menu?
We try only to use the best stuff that’s available seasonally. We're taking it from the local community or, even better, from our own garden. You know, we definitely let the garden inform a lot of the decisions that we’re making, maybe with small changes on a daily basis, depending on how many guests we’ve got and what’s growing. And then on top of that, you know, we're just looking seasonally – like a snapshot of the absolute best thing we can buy on any given day.
We have a lot of direct talks with a fishmonger where we talk about what’s coming in and what’s in season – what’s the best they have right now? And then we’re changing the fish according to what’s being caught locally – it’s the best quality. Same with all of the dishes.
We’re not trying to lock something in for an extended period of time – the whole thing is dictated by what’s available to us: What’s the best thing we can buy? What would we like to serve?
And yeah, we’ve got a young, passionate, and dynamic team, and that allows us to change the menu every day if necessary.

Could you tell us a bit about what it’s like working in our shirts?
We’ve been working in these Lindbergh shirts and they’re actually incredible – not just because I'm wearing them, but if they weren’t incredible, I wouldn’t be wearing them. They’re really amazing. The kitchen team looks absolutely immaculate all the time. They’re easy to iron. They’re stain-resistant, which is amazing – especially for us in the kitchen – they can often get dirty.
It’s nice that they come back looking brand new every week when we wash them. The one I’m actually wearing now is at least 18 months old – if not two years old – and it pretty much looks as good as when I first got it. You know, with a lot of care and a good amount of Vanish being used in my washes, it’s still pretty much brand new!
So I think with a little care they can last for many years. They look super good – both in slim and modern fit – with a big range of motion as well, which I think is really important. Some brands don’t give you that range of motion, and that makes it really difficult or impossible to work in them.
I think we’re really putting them through a very rigorous day. There’s a lot of hot things, a lot of steam, and bending up and down. There’s a lot of reaching and movement, which might not be the same in an office setting. So I think it’s very important that they’re comfortable and durable.
How do you find the quality?
It’s pretty incredible, actually! From the packet to even one wash, the difference in comfort is pretty incredible. It's hard to imagine they can be so soft.
Some people work in chef jackets, but they’re crazy expensive if you want good quality, and they don't last like a shirt. The ones you can get at affordable prices are made of synthetic material, and there’s no comfort. As soon as you spill something on them, it stains – and then you’ve got a big problem.
I think that we’re probably not the best restaurant in the world, but we’re definitely the best-dressed restaurant in the world – and that’s pretty important too.

A chat with André Larsen, assistant restaurant manager
Can you tell us why your inn is worth a visit?
Henne Kirkeby Kro is, at its core, an old roadside inn that’s been carefully renovated over time to match our gastronomic ambitions. These days, we’d probably call it a gourmet restaurant, but we’re still very much rooted in West Jutland – and we want people to feel that.
It’s a blend of fine dining and West Jutland charm, with both feet firmly on the ground. That goes for the food and the way we are in the restaurant. That down-to-earth vibe is important to us – and hopefully it’s something our guests pick up on too.
We care a lot about a warm welcome and about being present. When you’re here, you feel connected to the place. It’s a full experience – we’re more than just a restaurant. Of course, the food and wine need to be top-notch – that’s something we really take pride in – but it’s just as much about the whole feeling of coming to Henne. You kind of get drawn into the little world we’ve built around the place.

Can you tell us a bit about the surroundings you’re located in?
It’s an old inn with over 200 years of history. The gastronomic roots here run deep – they’re not something that just popped up overnight.
There’s a lot of respect for the Beck Thomsen family – Hans Beck Thomsen was the one who really put us on the culinary map. In 2007, the family sold the inn to the current owners, the Skouboe family. Then in 2012, Paul Cunningham came on as head chef. And now we also have Alan Bates onboard, who works closely with Paul to shape the direction of our food.
We cook at a very high level, but it’s super important to us to keep that relaxed, cozy, and unpretentious atmosphere.
We always aim to source the very best ingredients we can get our hands on and treat them with care and respect – but without any kind of snobbery. Our approach is highly professional, but in a calm, West Jutland kind of way.
Now that we’ve had the pleasure of dressing your team, what made you choose our shirts and suits?
We’ve been testing your great shirts and suits for a while now, and we’re really happy with them. There’s a lot of flexibility in the clothes – you can actually work in them.
We move around a lot, and even though suits can often feel a bit stiff, that’s not the case with yours. Another big plus is that they’re stain-resistant. We’re exposed to all sorts of things during a workday, so that’s super practical – and they still look sharp.
